Almond Butter & Sunflower Seed Cookies

These flourless Almond Butter & Sunflower Seed Cookies are incredibly simple to bake & come together very quickly (in 1 bowl). We’re only using very few ingredients, so the preparation is super quick & simple.

INGREDIENTS:

  • 200g Nib & Nut Classic Almond Butter
  • 80g Brown Sugar/Coconut Sugar
  • 1 tsp Baking Soda
  • 3 to 4 drops of Vanilla Essence
  • 60g Sunflower Seeds (you can also substitute this with 120g of chocolate chips)

METHOD:

  • Preheat oven to 180 C
  • In a bowl whisk egg until beaten. Mix in the almond butter, sugar, baking Soda, and vanilla essence
  • Mix everything very well. Once done, fold in the Sunflower seeds or chocolate chips, based on what you are using
  • Scoop the dough on an oven tray lined with a baking sheet or a silicon sheet (if you find the cookie dough balls are oily just blot each of them with a paper towel.)
  • Bake for 10 min for a soft cookie or 13 to 15 min for a crisp one
  • Allow cookies to cool down
